Propyl gallate (PG), also known as propyl gallate, has the molecular formula C10Hl2O5. Relative molecular weight 212.21
White to light yellow brown crystalline powder or milky white needle shaped crystals. Odorless, slightly bitter, and odorless in aqueous solution. It has hygroscopicity and light can promote its decomposition. Difficult to dissolve in water, easily soluble in hot water, ethanol, ether, propylene glycol, glycerol, cottonseed oil, peanut oil, and lard. The melting point is between 146 and 150 ℃, and it is sensitive to heat and decomposes at the melting point. Therefore, when used in food, it has poor stability and is not resistant to high temperatures, and is not suitable for baking.
